I adore the cozy, warm flavors that make you feel like you’re wrapped in a fluffy blanket, sitting by a fire while it’s softly snowing outside. Ohhhh I love that feeling! Those are the vanillas, maples, brown sugars, pumpkins, cinnamons… the warm flavors.
But I also enjoy a little bit of kick and surprise with my treats. Lime is one of my favorite year-round flavors because it’s so uniquely refreshing, and can hold its own in any recipe. That’s why this year, I decided to blend my two loves and create a lime sugar cookie for the holidays! You’ll want to make this year round, and might be surprised at just how amazingly delicious these really are!
This recipe might seem familiar to some of you – because it’s my Coconut Sugar Cookies recipe, and I just replaced the coconut with perfect amounts of lime!
What you need:
- 2/3 cup butter (softened)
- 1 1/2 cups sugar
- 2 eggs (room temp.)
- 2 Tablespoons fresh lime juice (about 1 1/2 squeezed small limes)
- 2 3/4 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup lime zest (about 6 small limes)
- sprinkles
Make them:
Preheat that oven to 350, and line your baking sheets with parchment paper.
In your mixer, cream the butter and sugar until it’s light and fluffy. Add the eggs, one at a time, mixing well after each. Add the lime juice and mix well.
In another bowl, combine the flour, baking powder and salt and add it, gradually to the wet mixture.
Finally, add in your lime zest, mixing well until fully incorporated throughout the dough.
Either create balls then flatten them slightly for round cookies, or roll out with a bit of flour and use cookie cutters. These awesome holiday cookie cutters are perfect for this recipe!
Bake for about 8-10 minutes, until they just start getting that golden lining around the edges. They’ll look like they aren’t done in the middle, but they are -just take them out and let them cool off to set.
As they are cooling, sprinkle with festive green sprinkles!
