ROLO Brookies – Brownie Cookies!

Brookies are so much FUN!  It’s a brownie + cookie in one sweet little treat, so you don’t have to pick between the two. YUM! I wanted to somehow incorporate caramel into the middle of a brookie, and of course, I immediately thought of Rolo candies!  These are classic, underrated, and melt perfectly when you bake with them. This recipe is SUPER simple, and takes very few ingredients. ENJOY!

What you need:

Make them:

Preheat the oven to 350 degrees.

Make brownie mix as directed.

Prepare your mini muffin pan by spraying lightly with Pam or other spray oil.

Place 1 teaspoon of cookie dough and smash into bottom.

Gently squish a single Rolo candy in middle of cookie dough.

Spoon about 1 – 1/2 teaspoons brownie mixture over the Rolo to just cover it.

Bake about 15 minutes, or until brownies are done.

You should get around 70 brookies from this recipe.
