Once the holidays are over, I’m left feeling disappointed and sad. One of the things I miss the most is the holiday baking! I wanted a cookie that would easily transition between the winter and spring seasons – and think I found the perfect combination! Coconut sugar cookies give you the comfort and warmth of the holidays. At the same time, they give a great kick of coconut flavor that’s fresh and sunny. It’s an amazing cookie. You can either drop tablespoon-size balls, or roll out the dough for cookie cutters. Either way, you don’t be disappointed in these coconut sugar cookies!

What you need:
- 2/3 cup butter (softened)
- 1 1/2 cups sugar
- 2 eggs (room temp.)
- 2 teaspoons coconut extract
- 2 3/4 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sweetened coconut shreds
- white chocolate or vanilla candy melts
Preheat that oven to 350, and line your baking sheets with parchment paper.
In your mixer, cream the butter and sugar until it’s light and fluffy. Add the eggs, one at a time, mixing well after each. Add the coconut extract and mix well.
In another bowl, combine the flour, baking powder and salt and add it, gradually to the wet mixture.
Finally, add in your coconut shreds, mixing well until fully incorporated throughout the dough.
Either create balls then flatten them slightly for round cookies, or roll out with a bit of flour and use cookie cutters. I liked the stars this time, so that’s what I picked. Remember, if you’re using cookie cutters, this dough has stringy coconut in it, so you’ll want to try to cut the pieces as cleanly as possible.
Bake for about 8-10 minutes, until they just start getting that golden lining around the edges. They’ll look like they aren’t done in the middle, but they are -just take them out and let them cool off to set.
After your cookies are completely cooled, then you can decorate! Drizzle or dunk with white chocolate and sprinkle to your heart’s delight. Enjoy this fun take on a classic cookie that’s comfort food at its best!
