I love nectarines. That’s enough of an intro, right? That little fruit is what inspired this recipe! I wanted the buttercream to be a complimentary but surprising topping, and it WAS! This might be my favorite buttercream I’ve ever created!
WHAT YOU NEED:
Cupcakes
- 1 box yellow cake mix
- 1 can Sprite
Alternatively, you can make the cake according to the box!
Nectarine Filling
- 3 nectarines (peeled and diced)
- 2 1/2 tablespoons brown sugar
- 2 tablespoons lemon juice
- 1 tablespoon corn starch
- 1 tablespoon sugar
- 1/4 cup water
Honey Vanilla Buttercream
- 1 cup salted butter (softened)
- 2 1/2 teaspoons vanilla
- 2 teaspoons honey
- 4 cups powdered sugar
- 1 -2 tablespoons heavy whipping cream (add until you have the frosting consistency you want)
MAKE THEM:
Cupcakes
Preheat oven to 350. Fill cupcake liners 3/4 full of batter and bake 18-20 minutes.
Allow to cool completely before coring centers out.
Nectarine Filling
In a medium pan, add the filling ingredients and stir.
Cook over medium low heat until just starts to boil and bubble.
Remove from heat and put lid on for 10 minutes.
Place in bowl, then put in fridge to cool.
Core each cupcake and fill with the nectarine once both are cool.
Honey Vanilla Buttercream
Beat the butter until smooth.
Add honey and vanilla and beat another minutes.
Add powdered sugar 1 cup at a time. When it begins to thicken too much, add the heavy whipping cream.
Frost your cupcakes and ENJOY!
