Peanut Butter Bacon Banana Bread

Banana bread is one of my favorite things to bake.  It’s so versatile and fun to change around by adding complimentary flavors. It might surprise you to know that I’m not a fan of bananas, or plain banana bread. It  seems like every other human LOVES it! But I DO love peanut butter, and I do love bacon. In fact, I’ve made Peanut Butter Bacon Candy, too!  So combining peanut butter and bacon into a banana bread just makes sense. Make it, enjoy it, make it again, and then try to share some of it! 🙂 This is one banana bread I can definitely get on board eating!

What you need:

  • 3 medium ripened bananas
  • 1/2 cup peanut butter
  • 1/2 cup milk (I use almond milk)
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups flour
  • 10 strips bacon

Make it:

Preheat your oven to 350.  Lightly spray your bread pan and dust with flour.

In a medium bowl, use a whisk or fork to smash up the bananas until they are nearly smooth.

Melt the peanut butter for 15 seconds in the microwave, then stir and melt another 10 seconds.  Add that to the bananas and whisk until smooth and creamy.

Add banana and peanut butter mixture to a large mixing bowl.

On low speed, add milk, egg, vanilla and sugar. Beat until light and fluffy.

Back on low speed, add the soda, salt, cinnamon and flour.  Mix until just combined.

Cut up bacon before cooking, into small pieces.  Cook on a pre-heated pan until cooked through, then drain on paper towels.  Fold the bacon into the batter.

Pour into prepared pan and bake for 55-70 minutes, or until a toothpick inserted comes out clean.

Let cool about 10 minutes before releasing it from the pan, then let it cool completely (about 45 minutes) before cutting slices.

    Have to admit this is a total new one for me. Peanut Butter Bacon Banana bread looks and sounds so good. It looks very easy and adding thiss to my to do list
