Mint and dark chocolate go together perfectly. It’s one of those classic combinations that seems like they were made for each other. Junior Mints, Andes Mints, mint chocolate chip ice cream… you can find this awesome duo everywhere! This recipe was inspired by the new Dark Chocolate + Mint Kit Kat candy bar.
I wanted a super deep fudgey cookie that wasn’t necessarily dark chocolate, since I’m not a HUGE fan of dark chocolate. But then I wanted to incorporate dark chocolate and mint into that cookie. And this became the perfect mint chocolate fudge cookie! Note that Duncan Hines does make a Dark Chocolate Fudge Cake Mix that you could use.
If you can’t find the dark chocolate & mint morsels in your favorite store (or it’s off-season), grab some bags HERE! They store nicely in the freezer when you place them in freezer bags. There are other brands and options HERE, as well.
What you need:
- 1 box chocolate fudge cake mix (I used Betty Crocker)
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon mint extract (this is my favorite!)
- 1 bag Nestle Winter Dark Chocolate & Mint Morsels (or any 10 ounce bag of chocolate + mint morsels)
Make them:
Preheat oven to 350 degrees.
Line cookie sheets with parchment paper.
In your mixer, combine the cake mix, oil, eggs, and vanilla until just combined.
Add peppermint extract until incorporated.
Fold in chips.
Chill dough for about a half hour, until it’s sturdy enough to handle and scoop out into balls. I love my cookie scoop, and highly recommend anyone that bakes owns one! This dough is very thick, so be prepared for that – thicker = fudgier! 🙂
Scoop out balls and set about 2 inches apart on a cookie sheet.
Bake 9-11 minutes.
Allow to cool completely on cooling racks.

This sounds like a simple recipe but I would use a better quality chocolate since Nestle gets its cacao from plantations associated with child slave labor.
