Lemon Pound Cake Cupcakes Recipe

Pound cake is called “pound cake” because it’s generally equal parts (1 pound each) of flour, butter and sugar.  Obviously, I’m not using a pound of each of those in these cupcakes, but I wanted to get that rich, thick, dense, pound cake texture in them.  And lemon… well that’s just a flavor that identifies summertime!

These cupcakes are absolutely delicious, offering a bit more of a muffin quality in texture.  That’s balanced into a great cupcake with the light and airy lemon flavor.  You’ll use lemon extract AND lemon zest – and don’t be shy with that zest.  These leave a beautifully refreshing and citrusy aftertaste in your mouth after each bite!

What you need:

  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract
  • 4 full tablespoons lemon zest
  • 1 3/4 cups flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream

GLAZE

  • 2 cups powdered sugar
  • 3 tablespoons lemon juice

Make them:

Preheat the oven to 400 degrees and prepare your muffin pan with greased cupcake liners.  I normally like the small “mini” cupcakes, but for these, I decided to go with the standard cupcake size. These gold foil liners are so cute!

In your mixing bowl, cream the butter and sugar.  Add the eggs, extracts and lemon zest. Mix well.

In another bowl, whisk together the flour,  baking soda, and salt. Add to the creamed mixture, alternately with the sour cream.

Fill the cups 2/3 full and bake for about 16 minutes or until a toothpick comes out clean.

Cool on a wire rack.

Whisk together the glaze ingredients, and drizzle over cooled cupcakes.
