It’s tough living in Texas, because the weather is so predictably unpredictable! Fall doesn’t really happen for long here, but that doesn’t stop me from celebrating the new season! It might be 90 degrees outside, but my heart is deep inside a mug of hot cocoa with marshmallows! This recipe was inspired from my boyfriend, who loves to put whipped cream, AND marshmallows in his hot cocoa!
What you need:
- 1 box white cake mix
- 1 cup water
- 1/4 cup coffee
- 3/4 cup hot cocoa mix
- 4 egg whites
Marshmallow Filling
- 1/4 cup unsalted butter (softened)
- 2/3 cup marshmallow fluff
- 1/2 teaspoon vanilla
- 1 1/3 cup powdered sugar
- pinch salt
Whipped Cream Frosting
- 2 cups heavy whipping cream
- 1/3 cup powdered sugar
- 1 small box vanilla pudding (around 3.5 oz)
Make them:
Preheat oven to 350. Prep your cupcake pans with liners.
In your mixer, combine all cake ingredients and mix until just combined.
Fill cupcake tins 3/4 full of batter.
Bake 19-23 minutes until toothpick comes out clean.
Cool completely
MAKE THE MARSHMALLOW FILLING
Beat the butter, marshmallow fluff and vanilla for 2 minutes
On low, mix in the powdered sugar and salt until well combined.
Cut holes out of the tops of each cupcake and fill with marshmallow filling.
MAKE THE WHIPPED CREAM
Beat 2 cups heavy whipping cream until it just starts to thicken.
Add powdered sugar and pudding mix and beat until frosting consistency.
Frost cupcakes, and top with chocolate sprinkles, chopped chocolate bar, chocolate fudge, mini marshmallows, or whatever your heart desires!
