Apple Cake Cupcakes with Brown Sugar Cream Cheese Frosting

While most people say that banana is their favorite fruit, mine is a big more boring – apples!  I love tart green or sweet red apples and eat at least one a day.  I had to incorporate my love of apples into a cupcake, without being generic and delivering you an apple pie cupcake.  My solution – apple cake cupcakes with brown sugar cream cheese frosting!  And yah – they are as good as they sound!  That frosting sets it over the top, for sure!  Grab yourself a good quality spice mix for this to set off those flavors!

What you need:

Apple Cake

  • 1 box Spice Cake Mix
  • 3 eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 2 large green apples (peeled, diced)
  • 4 tablespoons flour

Brown Sugar Cream Cheese Frosting

  • 1/2 cup butter (softened)
  • 8 oz. cream cheese (softened)
  • 1 1/2 teaspoons of vanilla
  • 3 1/2 – 4 cups powdered sugar
  • 1 cup brown sugar (packed)

Make them:

Preheat your oven to 350.

Prepare your muffin pans with muffin liners.  Check out these adorable autumn-themed cupcake liners!

In your mixer, combine the cake mix, eggs, water, oil, sour cream, and lemon juice.  Mix on medium until just combined.

In another bowl, add the diced apples with flour and toss until they are coated (this keeps them from sinking in the cupcake!).  

Carefully fold the apples into the cake.

Bake for 12-17 minutes.

Make the frosting

Beat butter and cream cheese on medium-high until blended completely.  

Add vanilla and continue to beat 2 minutes.

Add brown sugar and beat another 2 minutes.

Add powdered sugar, 1/2 cup at a time, on medium speed.  Continue to add until you have a good, thick, frosting.
