Strawberry Pineapple Bread
A DELICIOUS mix of tart pineapple and sweet strawberry flavors in a mini loaf!
Pineapple Jell-O powder
drops pineapple flavor oil
OPTIONAL- adds more flavor!
sour cream or nonfat plain Greek yogurt
for swirl + 1 cup (for larger pieces) strawberries
Preheat the oven to 400 degrees and prepare your silicone mini loaf pan. You can do this in regular bread pans, but you’ll need to cook longer.
In your mixing bowl, cream the butter and sugar. Add the eggs, extract, pineapple Jell-O powder, and pineapple oil (find at Walmart, Hobby Lobby or Amazon!) . Mix well.
In another bowl, whisk together the flour, baking soda, and salt. Add to the creamed mixture, alternately with the sour cream.
Fill the loaves 2/3 full of batter. Spoon over 1/2 tablespoon strawberry swirl mixture and use a toothpick or butter knife to swirl it into and around each loaf.
Stuff strawberry pieces into the loaves.
Bake for 20-30 minutes and allow to cool completely, then pop out of the pan and enjoy!
