Apple Pie Snickerdoodles
These sweet, super soft cookies are the perfect combination of two holiday favorites - apple pie, and snickerdoodle cookies!
Ingredients

shortening

sugar

cream of tartar

baking soda

teaspoon
salt

greek yogurt or sour cream
1 1/2

apple
peeled and diced

flour

+ about a 1/2 cup Apple pie spice
or make your own- 3-4x this recipe: 2 tablespoons cinnamon, 1 1/2 teaspoon nutmeg, 1 teaspoon allspice

Instructions
Preheat oven to 400 degrees.
Line cookie sheet with parchment paper.
In your mixer, cream the shortening, sugar and eggs until light and fluffy.
In a medium bowl, mix flour, cream of tartar, baking soda, and salt until combined.
Alternate adding dry mixture with greek yogurt to the batter.
Cut apples and coat with 2 tablespoons flour + 2 tablespoons apple pie spice.
Fold apples into batter.
Scoop out about 2 tablespoons of batter per cookie. I use my medium cookie scoop.
Mix 1/2 cup apple pie spice + sugar until well combined.
Roll in the apple pie spice/sugar mixture until well coated.
Place a couple inches apart on the cookie sheet.
Bake for 8-10 minutes, then pull out of oven and let sit another minute before transferring to cookie rack to cool.
