Strawberry Shortcake Rice Krispies Treats

Strawberry shortcake is definitely a winner when it comes to fresh summer flavors. However, creating that flavor combination of tart strawberries, sweet whipped cream, and buttery shortcake isn’t always easy. For a quick, easy, and pretty delicious shortcut, try strawberry + white chocolate!  It might not be the classic, but it’s dang close!

Last summer, I made these Watermelon Rice Krispies Treats, using a similar recipe.  Check them out!

What you need:

  • 3 tablespoons butter
  • 10z (about 40) large marshmallows OR about 4 cups mini marshmallows
  • 4 tablespoons Strawberry Jell-O
  • 5 cups Rice Krispies Cereal
  • 2 cups Rice Chex
  • 1 cup white chocolate chips
  • white chocolate for drizzle

Make them:

Prepare a 13×9″ pan by  laying down wax paper and lightly spraying it.

In a large pot over medium-low heat, melt the butter, marshmallows, and Jell-O.

Once melted, immediately take off heat.

In a large bowl, combine all cereals and white chocolate chips, and carefully mix until combined.

Pour cereal mix into marshmallow mixture pot, and carefully combine.

Using a buttered or sprayed spatula, evenly pat down the mixture in the 13×9″ pan.

Drizzle with melted white chocolate, and let set until it reaches room temperature.

Cut into squares, and enjoy!

The ultimate in summer treats! This Strawberry Shortcake Rice Krispies Treats recipe is super simple, and delivers and extra pop of flavor with a nice crunch!

Ingredients

  • 4 tablespoons Strawberry Jell-O

  • 2 cups Rice Chex
  • 1 cup white chocolate chips
