Strawberry shortcake is definitely a winner when it comes to fresh summer flavors. However, creating that flavor combination of tart strawberries, sweet whipped cream, and buttery shortcake isn’t always easy. For a quick, easy, and pretty delicious shortcut, try strawberry + white chocolate! It might not be the classic, but it’s dang close!
Last summer, I made these Watermelon Rice Krispies Treats, using a similar recipe. Check them out!
What you need:
- 3 tablespoons butter
- 10z (about 40) large marshmallows OR about 4 cups mini marshmallows
- 4 tablespoons Strawberry Jell-O
- 5 cups Rice Krispies Cereal
- 2 cups Rice Chex
- 1 cup white chocolate chips
- white chocolate for drizzle
Make them:
Prepare a 13×9″ pan by laying down wax paper and lightly spraying it.
In a large pot over medium-low heat, melt the butter, marshmallows, and Jell-O.
Once melted, immediately take off heat.
In a large bowl, combine all cereals and white chocolate chips, and carefully mix until combined.
Pour cereal mix into marshmallow mixture pot, and carefully combine.
Using a buttered or sprayed spatula, evenly pat down the mixture in the 13×9″ pan.
Drizzle with melted white chocolate, and let set until it reaches room temperature.
Cut into squares, and enjoy!
