Strawberry Shortcake Cookie Cups

I’m not much of a fruit lover… but strawberry shortcake is definitely one fruity dessert I will never pass up! There’s something about the combination of sweet and tart flavors, with the contrasting textures of the pound cake, strawberries, and fluffy whipped cream. I decided to put my twist on strawberry shortcake by making strawberry shortcake cookie cups! Hope you love these as much as I do!

WHAT YOU NEED:

  • 1 packages refrigerated sugar cookie dough that makes 24 cookies

Strawberry Filling

  • 2 cups strawberries (diced)
  • 2 tablespoons corn starch
  • 1/4 cup sugar
  • 1 1/2 teaspoons lemon juice
  • 1 tablespoon salted butter

Vanilla Whipped Cream

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla bean paste (or you can use extract)

Alternatively, you could use Cool Whip if you’re in a hurry.

MAKE THEM:

Preheat oven according to your sugar cookie package instructions.

Grab your mini silicone muffin pan and set aside.

Break off and roll about a tablespoon of dough in your palms, then place inside each mini muffin compartment. per mini muffin compartment. This is half of the pre-portioned cookies, so a 24 pack will actually make you 48 cookie cups.

Bake according to instructions on sugar cookie package.

Once done, use the end of a wooden spoon to create a cup out of the dough, making sure there’s an even amount on the side and bottom. These become your cookie cups.

Strawberry Filling

In a small saucepan, combine the strawberry filling ingredients except the butter.

Heat over medium-low heat until thickened.

Take off heat and add butter, mixing until combined.

Place in fridge until completely cooled.

Vanilla Whipped Cream

Place your beater and metal bowl in the freezer for about 5 minutes.

Beat whipping cream on medium until soft peaks form.

Add powdered sugar and vanilla bean paste and beat again until stiff peaks form.

Once cookie cups have cooled, place about a tablespoon of the strawberry filling in the cookie cup, then top with whipped cream and a fresh strawberry.
