Summer flavors definitely include strawberry and pineapple. But have you ever had them in a mini loaf bread!? This is based off my Raspberry Lemonade Bread recipe, but with a fun and unique twist! Hope you like it as much as I do. Remember to adjust your baking time if you do a single loaf!
What you need:
- 1/2 cup butter (softened)
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 tablespoons Pineapple Jell-O powder
- 4-5 drops pineapple flavor oil (OPTIONAL- adds more flavor!)
- 1 3/4 cups flour
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sour cream or nonfat plain Greek yogurt
- 2 cups (for swirl) + 1 cup (for larger pieces) strawberries
Strawberry Swirl
- 2 cups strawberries (finely diced)
- 1/4 cup water
- 1 tablespoon lemon juice
- 3 tablespoons sugar
MAKE THEM:
Preheat the oven to 400 degrees and prepare your silicone mini loaf pan. You can do this in regular bread pans, but you’ll need to cook longer.
In your mixing bowl, cream the butter and sugar. Add the eggs, extract, pineapple Jell-O powder, and pineapple oil (find at Walmart, Hobby Lobby or Amazon!) . Mix well.
In another bowl, whisk together the flour, baking soda, and salt. Add to the creamed mixture, alternately with the sour cream.
Fill the loaves 2/3 full of batter. Spoon over 1/2 tablespoon strawberry swirl mixture and use a toothpick or butter knife to swirl it into and around each loaf.
Stuff strawberry pieces into the loaves.
Bake for 20-30 minutes and allow to cool completely, then pop out of the pan and enjoy!
