Strawberry Milkshake Cupcakes

There’s something about a strawberry milkshake that’s just so timeless. It’s pink, sweet, and classic. I was inspired to make this recipe after flipping through a mid-century design book. It made me think of the ’50s, soda jerks and ice cream parlors… so of course, I envisioned hoop skirted girls in pigtails getting strawberry milkshakes from the counter.

The recipe was even easier when I found the Sonic Strawberry Milkshake Pudding Mix at my Walmart. You can also get it HERE. Don’t worry – you can use a strawberry milk powder like Nesquik (find that HERE) if you can’t get the Sonic pudding mix.  I hope you fall in love with these, like I did!

You are changing up the ingredients required by the box of cake mix, so disregard those, and use what you see below instead:

WHAT YOU NEED:

  • 1 box strawberry cake mix
  • 3 eggs + 1 egg yolk
  • 1/2 cup melted butter
  • 1 cup water
  • 1/2 cup malted milk powder (I use Carnation)

STRAWBERRY MILKSHAKE WHIPPED CREAM

  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 (3.3oz) box Sonic Strawberry Milkshake Pudding Mix (or 1/2 cup + 1 T strawberry milk powder)

I made a 1/2 batch of regular whipped cream to top my cupcakes – 1 cup heavy whipping cream + 2.5 T powdered sugar.

MAKE THEM:

Preheat oven to 350.

Place cupcake liners in muffin pan and grease lightly.

In a bowl with a whisk, combine the cake ingredients and beat until just mixed.

Fill each cupcake liner 3/4 full of batter and bake for 15-21 minutes.

MAKE THE WHIPPED CREAM

Place mixing bowl and beater in the freezer for 2 minutes.

Remove, and beat heavy whipping cream until it just starts to thicken.

Add pudding mix and powdered sugar and beat until light and fluffy.

Frost your cupcakes, and garnish with more whipped cream, sprinkles, and a fun straw!

These amazing little cupcakes will definitely give you that lucious, creamy, sweet strawberry milkshake vibe. Be careful - you'll probably get addicted quickly!
