When the weather heats up, I’m always trying to create something fun, unique & refreshing. These cookies are “freezer cookies” because they taste best (to me, at least) straight out of the freezer! It’s just a few ingredients to combine – either from scratch OR from jars. Either way, they are super fast & easy to make. I hope you enjoy them as much as I did!
WHAT YOU NEED – Pantry style:
- 1 package Biscoff Cookies
- Any berry jam
- 3/4 cup Marshmallow Fluff
WHAT YOU NEED – Homemade style:
- 1 package Biscoff Cookies
- 8-10 fresh, diced strawberries
- 3-4 tablespoons sugar
- 1-2 tablespoons lemon OR orange juice
- 1 teaspoon corn starch
- 1 cup mini marshmallows
- 1 tablespoon corn syrup
MAKE THEM – Pantry style:
Spread Marshmallow Fluff on the inside of a cookie, then top with jam and another cookie.
Place in freezer for at least 30 minutes.
Enjoy!
MAKE THEM – Homemade style:
In a small saucepan over medium heat, add the diced strawberries, sugar, lemon juice, and corn starch. Stir until it begins to thicken and bubble, then remove from heat.
In a small bowl, add the marshmallows and corn syrup. Microwave in 30 second intervals, stirring between each, until completely combined and creamy – be careful not to over heat!
Spread your homemade fluff on the inside of one of the cookies, then top with strawberry compote and another cookie.
Freeze for at least 30 minutes and enjoy!
QUICK NOTE: these are GREAT frozen – it’s my preference. But you can definitely still eat them after they’ve cooled to room temperature!
