I’m a salty snacks kinda girl. Some prefer sweets – I like salty. That’s actually why I created my Salty Snacks Cookies recipe! So when salted caramel became a popular thing – I was all about it. Give me the butter, brown sugar and condensed milk with some SALT! I created these Salted Caramel Butter Truffles on a whim. I found a brand new container of salt in my pantry, and while grabbing it, I knocked over a can of condensed milk, which fell on top of a bag of brown sugar. If that wasn’t a sign to make a new salted caramel recipe, I don’t know what would be!
I call these “butter truffles” because of the texture. It’s like butter…. soft and creamy. After my first trial batch was such a success, I decided it was a recipe worth sharing with my lovely readers (that’s you!). So here you go! By the way – I’ve since had multiple requests to make more of these, and each time, they last about 2 seconds on the plate before they are gone. Prepare to make several batches! 🙂
What you need:
- 1/4 cup unsalted butter
- 1 cup sweetened condensed milk
- 1/2 cup light brown sugar
- 1 cup white chocolate chips
- 1/2 teaspoon sea salt + extra for sprinkling on top
- 10 ounces chocolate candy coating or about 2 cups chocolate chips
In a medium saucepan over medium heat, melt the butter, condensed milk, and brown sugar until totally combined and sugar is dissolved and it starts to thicken a little, about 4-6 minutes. Alternatively, you can use a microwave in 30 second spurts.
Mix in the white chocolate chips until they have melted completely and you have a smooth mixture. Depending on the quality of the chocolate, this might take some time. Again, you can also opt for the microwave.
Remove from heat.
Slowly stir in the sea salt until combined throughout.
Allow to cool about 10 minutes.
Transfer to a bowl, then cover with plastic wrap, making sure the top of the mixture is totally covered by the wrap. Leave in refrigerator for 2-4 hours, or until it’s nice and solid.
Take it out of the fridge and let it sit for about 10 minutes.
Using a tablespoon cookie scoop, create balls of salted caramel mixture. Roll them in your hands to make them smooth.
Place toothpicks in the center of each ball, then put each on a cookie sheet lined with wax paper.
Place in freezer about 30 minutes.
Melt the candy melts or chocolate chips in the microwave until completely melted and smooth. Let it cool but not harden before coating the candies.
Coat them each in the melted chocolate.
Sprinkle with sea salt while they are still wet.
Let them set until chocolate has hardened, then dig in!! 🙂
This recipe makes about 10-13 truffles. You can double the recipe to make more.
To keep their shape and consistency, you’ll want to store these in a container in the fridge.
