Rocky Road Grahams

I admit that rocky road has never been a go-to flavor for me. I’m a fan of chocolate. I enjoy marshmallow. And I absolutely love almonds. But putting them together just never really worked for me. However, when I created this recipe, I was cleaning out my pantry and found these ingredients. I figured I would give my own rocky road recipe a shot, and holy moly, are they good! These are super easy, fast, and simple enough for kids to help you make them! Plus, they are a fun take on s’mores for s’mores fans! Hope you enjoy 🙂

WHAT YOU NEED:

  • Graham crackers (broken into quarters)
  • Milk chocolate chips
  • Almonds (crushed)
  • Marshmallow Creme

MAKE THEM:

Line a baking tray with parchment or wax paper and set aside.

Break your graham crackers along the lines, into quarters.

Melt the chocolate chips in the microwave in 30 second intervals until smooth.

Melt the Marshmallow Creme in the microwave in 30 second intervals and stir until smooth.

Place your crushed almonds in a small bowl and set aside.

To assemble, dip one side of one quarter graham cracker into the milk chocolate and spread evenly.

Sprinkle almonds over the chocolate.

On the other quarter of the graham cracker, spread Marshmallow Creme.

Sandwich both sides together, pressing slightly. Let sit for 4-5 minutes.

Dip one end into the milk chocolate, then sprinkle with sprinkles, mini chocolate chips, or more crushed almonds.

Set on parchment or wax paper on the baking tray, and put that in the fridge for at least 30 minutes.

Once they are set and the chocolate is hardened, they are ready to eat!

Call it a s'more with almonds, or call it a Rocky Road Graham - either way, they are ridiculously easy and fast to make, and absolutely delicious!
