
Here’s a super easy, quick and delicious meal that the entire family can enjoy! This recipe is really versatile, too – change the meat from beef to lamb or pork, switch out the veggies for your favorites, and maybe even use a different type of cheese! No matter how you work it, shepherd’s pie is always a comfort food hit. Here’s my favorite version:
1 lb ground beef
1/2 cup frozen corn
1/2 cup frozen peas
1 cup ketchup (or more, depending on your taste)
about 5 cups mashed potatoes
about 2 – 3 cups shredded cheddar cheese
diced onion
diced garlic
garlic powder
onion powder
salt & pepper
Prepare mashed potatoes, using diced garlic and seasonings. Set aside. Brown beef, adding in diced onions in a skillet. Place beef/onion mixture into a medium sized bowl. Add in ketchup and veggies, and combine well. Place beef mixture on bottom of 9×9″ pan. Place mashed potatoes evenly over the beef, pressing down slightly. Place grated cheese over the mashed potatoes. Bake at 350 for about an hour. Note: The more cheese you put on top, the better this becomes! The top part of the cheese becomes a crust, and the cheese underneath melts into the mashed potatoes!
