If you need a quick, easy treat to make for co-workers, friends and family, or just want something fun and different for dessert – here you go! This Microwave Meringue recipe takes about 3 minutes total – from cracking the egg to enjoying crispy, airy and super sweet meringues that you make in your microwave!
Here’s what you need:
3 1/2 cups Powdered Sugar
Crack the egg (we suggest using a LARGE egg), and put just the white into a bowl. Dump 3.5 cups of powdered sugar in the bowl. Mix with your hands for about 30 seconds-1 minute until you can create a large ball. Tear off pieces (about a tablespoon – note that our images above are larger to show detail) and roll into balls. Place 4 balls on paper towel – spread out, on a microwave safe plate. Heat for 1-2 minutes. You may need to do a “test” batch first, to determine how long your specific microwave will take to heat these to perfection. Peel off paper towel and enjoy! We added a bit of huckleberry jam to them to give these super sweet meringues a little kick of tart flavoring.
