Potato Stuffed Pork Chops Recipe! #recipe

 Here’s a simple but really delicious meal idea for your family dinners!  Stuff potatoes in pork chops, and coat them in a delicious bread crumb mixture, then top with bacon for a unique twist on the average pork chop meal.  Mix in your favorite seasonings and cheeses to make this your own!
The basic ingredient list below will help you create this recipe.  Depending on how many pork chops you need and how much mashed potatoes you put inside, you can figure out your proportions from there.

Pork chops (bone-in or boneless)
Mashed potatoes (we suggest adding garlic powder, onion powder, pepper and cheddar cheese to them)
Bread crumbs
Parmesan cheese
Garlic powder
Bacon
Lemon juice

Preheat oven to 350 degrees.  Make mashed potatoes, or use leftovers, and set aside.  Place bacon in a skillet at medium heat to start cooking.  Once it’s about half-way done (still pliable), lay on paper towels to drain. Season pork chops as you want.  Slice pork chops from the sides to create a pocket.  Stuff with mashed potatoes.  Drizzle lemon juice on top of pork chops.  Mix bread crumbs, parmesan cheese and garlic powder by hand.  Coat pork chops with bread crumb mixture, including  any potatoes sticking out of the pocket.  Wrap pork chops with bacon.  Place in baking dish and cook for about 30 minutes, or until pink is gone from the meat.  ENJOY!
