Pink Lemonade Cupcakes

Although I’m not a fan of the heat during the summer season here in Texas, I DO look forward to pink lemonade! I love it! Pink lemonade IS different from regular lemonade. While lemonade is sour, pink lemonade  is sweeter, and that pretty color. I made these cupcakes prettier by splitting the frosting into two flavors – classic lemonade and pink lemonade! ENJOY!


WHAT YOU NEED
:

Cupcakes

  • 1 box lemon cake mix
  • 3 eggs
  • 1 cup water
  • 1 packet Pink Lemonade Kool Aid (minus 1 teaspoon for frosting)
  • 1/2 cup melted butter
  • pink food coloring

Lemonade & Pink Lemonade Frosting

  • 1 cup unsalted butter (room temp)
  • 1 cups powdered sugar (sifted)
  • 1 Tablespoon vanilla
  • pinch salt
  • 1/2 teaspoon pink lemonade Kool Aid
  • 4 Tablespoons fresh lemon juice

MAKE THEM:

Cupcakes

Preheat oven to 350.

Line muffin pan with cupcake liners and lightly spray.

Combine all cupcake ingredients, except food coloring. Mix slowly until just combined.

Add food coloring until color reaches your desired level.

Bake for 12-18 minutes or until toothpick comes out clean.

Frosting

Combine the butter and powdered sugar until well incorporated and smooth.

Add salt and vanilla and beat another 2 minutes.

Separate into two bowls.

In one bowl, mix 1/2 teaspoon Kool Aid.

In the other bowl, mix in lemon juice.

Frost cupcakes using both frostings (with any tip or method you want!).

    Oh my gosh!! I can only imagine the deliciousness! Pink lemonade is one of my favorite things ever..pink lemonade cupcakes?!?! I am drooling!

    I finally got to make these the other day and they were really good! Everyone liked them a lot.
