Perfect Sausage & Peppers Recipe! Crunchy Potatoes, Crisp Veggies + Hearty Sausage

Sausage and peppers is a classic, quick and easy family dinner.  Add in some perfectly cooked potatoes that are crispy on the outside and soft on the inside, and you have a hearty, delicious meal that will have everyone wanting seconds!

6 Russet Potatoes (medium to large)
1 package sausage (you can alternatively use Kielbasa, Linguisa or any other sausage variety)
1 medium yellow onion
1 green bell pepper
1 orange bell pepper (throw in a red bell pepper, as well for more color!)
3 garlic cloves
1 teaspoon onion powder
salt & pepper to taste
oil for frying
First, we want to get those potatoes nice and crunch on the outside, but soft on the inside.  The best method we’ve found is to either bake the potatoes at 400 until they are just able to have some “give” when you squeeze them (soft insides) OR put them in the microwave until they are just soft inside.  Heat oil in a large skillet on MEDIUM heat.  Cut up baked potatoes into small, bite sized pieces (preferably while still warm).  Place them in the oil and sprinkle with onion powder, salt and pepper.  Let them sit for about 20 minutes, without stirring them around, then flip them over to the other sides can brown.  Continue to do this until they have a golden brown, crunchy texture on the outside.
While potatoes cook, cut up onion, bell peppers and garlic.  Place in another skillet on medium until cooked through, but still crunchy.  Add cut up sausage and continue to cook until the sausage has a nice brown on it.  When the potatoes are done, drain them and return them to their pan.  Add the peppers, onions and sausage mixture to the potatoes and cover for about 10 minutes.  
Violá!  You have a delicious meal with the perfect potatoes, and a nice blend of spices!
