Peanut Butter Cheesecake Cupcakes

I’m all about peanut butter. I put it on everything… scrambled eggs, carrots, bacon… so I wanted to create a recipe that was super easy, super delicious, and super PEANUT BUTTER.  And, as a Golden Girls fan, you know I couldn’t pass up making a peanut butter cheesecake! Of course, I had to pair it with a chocolate cookie crust and chocolate whipped cream to really set it off. These turned out perfectly, and I’m so excited to make them again! I hope you like them, too!

WHAT YOU NEED:

Crust

  • 1 cup crushed chocolate cookies or chocolate graham crackers (about 10 cookies)
  • 4 tablespoons butter (melted)

Peanut Butter Cheesecake

  • 16 ounces cream cheese (room temperature)
  • heaping 1/2 cup creamy peanut butter
  • 2/3 cup powdered sugar
  • 1 1/2 teaspoons vanilla
  • 2 eggs (room temperature)

Chocolate Whipped Cream

  • 2 cups heavy whipping cream
  • 1/4 cup cocoa powder
  • 1/2 cup powdered sugar (sifted)

MAKE THEM:

Preheat oven to 325 degrees.

Line muffin tin with cupcake liners

Crust

Crush cookies or crackers, and mix with melted butter.

Add about 3/4 tablespoon to the bottom of each cup and press down.

Bake for 8-10 minutes or until set.

Set aside.

Peanut Butter Cheesecake

In a large bowl, beat the cream cheese, peanut butter, powdered sugar and vanilla until well combined, but do not over-beat.

One at a time, beat in the eggs.

Fill cupcakes with peanut butter cheesecake filling, and bake for 18-26 minutes or until set (toothpick should come out almost clean).

Allow to cool completely.

Chocolate Whipped Cream

Set your mixing bowl and beater in freezer for 10 minutes.

Combine heavy whipping cream, cocoa powder, and sugar, then beat for 5-6 minutes or until stiff peaks appear.   Do not over mix.

Top cupcakes, and serve!

Keep leftovers in the fridge.

Chocolate whipped cream and a chocolate cookie crust surround this incredibly decadent peanut butter cheesecake - creating a simple, cute, and absolutely amazing little cupcake!

    Man I’m not one to get excited about cupcakes in general but wow this looks good as a huge cheescake fan and of course I love peanut butter. Seems like it would be worth making.
