In all honesty – I’m not a huge fan of peaches. I like them, but don’t love them. However – peach iced tea is about the ONLY kind of iced tea I actually enjoy- and I LOVE it. As I was stirring up yet another pitcher of my peach iced tea, I thought the flavors would make for a really fun cupcake. And BOOM – the peach iced tea cupcake was created. It’s absolute perfection! This is my favorite kind of Peach Iced Tea.
WHAT YOU NEED:
Peach Iced Tea Cupcakes
- 1 box Yellow Cake Mix
- 3 eggs
- 1 cup peach iced tea (already mixed with water)
- 1/2 tablespoon peach iced tea powder
Peach Filling
- 1/2 can Peach pie filling
Peach Iced Tea Cream Cheese Frosting
- 1/2 cup butter (softened)
- 8 oz. cream cheese (softened)
- 1/2 teaspoon vanilla extract
- 3 1/2 – 4 cups powdered sugar
- 1 teaspoon peach iced tea powder (add more to taste)
MAKE THEM:
Preheat your oven to 350 degrees. Fill with cupcake liners.
Add the cake mix ingredients – REPLACING the peach iced tea with the water that the box will call for. Make the cake mix, blending until everything is JUST combined. Don’t over mix, or you’ll add air to the batter.
Bake 12-17 minutes OR until a toothpick comes out clean.
Set aside too cool completely.
Filling
Once cooled, core each cupcake and fill with peach pie filling.
Peach Iced Tea Cream Cheese Frosting
Beat cream cheese for about 3 minutes.
Add butter and beat until well combined – about 3 more minutes, scraping the sides of the bowl.
Add vanilla, and beat more.
Slowly add powdered sugar 1 cup at a time until mixed fully.
Add peach iced tea powder and beat until combined fully.
If you want to create a swirl effect – take 1/3 of the buttercream out and add food coloring. I used 2 drops pink and 5 drops yellow orange. Place a stripe of the white buttercream on plastic wrap, then colored buttercream right next to it, and finally another stripe of white buttercream. Roll it up and put it in your piping bag.
