I don’t think maple and pecan are just “fall flavors.” I’m all about them, all year! Who doesn’t love to feel cozy? That’s how these two flavors make me feel – warm, snuggly, and cozy! These are a simple recipe, made with a cake mix that you jazz up a bit. You can also really bring out that maple flavor by making the poke cupcakes, so that the maple syrup is drizzled throughout the middle of each cupcakes. YUM!
I added brown sugar to this maple buttercream, because OMG, it’s amazing! 🙂 Maple Pecan Cupcakes with Brown Sugar Maple Buttercream Frosting is a bit long – so I just call these “Maple Pecan Cupcakes.” But you’ll definitely fall in love with that brown sugar in the frosting!
What you need:
- 1 box yellow cake mix
- 3 eggs
- 1/3 cup oil
- 1 cup water
- 1/3 cup sour cream
- 1 teaspoon vanilla
- 1 cup pecans (toasted & coarsely chopped)
MAPLE BUTTERCREAM
- 4 sticks (2 cups) unsalted butter
- 7-8 cups powdered sugar
- 2 tablespoons light brown sugar
- 2 tablespoons maple syrup
- 2 tablespoons heavy whipping cream
- 2 teaspoons vanilla
- 1/2 teaspoon maple extract
- Additional pecans for garnish
Make them:
Preheat oven to 350 degrees.
Put cupcake liners in muffin pan. This silicone muffin pan is AMAZING!
In your mixer, combine all cake ingredients, except for pecans. Mix until just combined.
Fold in pecans.
Fill cups 3/4 full of batter.
Bake 18-21 minutes.
Allow to cool completely. Using straw, poke three holes in the middle of the cupcakes. Spoon over about a teaspoon of maple syrup.
MAKE THE MAPLE BUTTERCREAM
Cut the butter up into small pieces, and whip in your mixer for about 5 minutes.
Add 2 cups of powdered sugar and vanilla.
Beat until combined.
Add 3 more cups powdered sugar, brown sugar, and maple syrup. Beat 2 minutes.
Add 2-3 more cups powdered sugar, and 2 tablespoons whipping cream. Add 1 teaspoon maple extract (or more maple syrup if you don’t have extract, to taste) Beat 5 more minutes.
Frost and sprinkle with chopped pecans, then drizzle with a little more maple syrup!
