Maple Apple Streusel Bars

Who says maple and apple are just fall flavors? NOT ME! I say they are awesome flavors that should be enjoyed year-round! I had a bag of yummy, yummy apples in my fridge and I swear they winked at me when I was searching for recipe inspiration. Ok, apples – I got you. You’ll be the feature! 🙂 These are super simple and quick to put together – and absolutely incredible with a scoop of vanilla ice cream or a dollop of Cool Whip on top! Treat it as a breakfast coffee cake with your coffee… treat it as a dessert after dinner… just treat yo’self!

WHAT YOU NEED:

CRUST

  • 1 cup unsalted butter (room temperature)
  • 3/4 cup dark brown sugar
  • 1/2 teaspoon salt
  • 2 3/4 cup flour

APPLE TOPPING

  • 2 large apples (peeled and diced)
  • 1/4 cup brown sugar
  • 1 1/2 teaspoon apple pie spice (OR 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon ground cloves)
  • 2 -3 tablespoons maple syrup

STREUSEL

  • 1/2 stick salted butter (melted)
  • 1/2 cup brown sugar (packed)
  • 2 tablespoons granulated sugar
  • 1/2 cup flour
  • 1/3 cup pecans, walnuts or almonds (finely chopped) – I use almonds
  • 1 teaspoon cinnamon

MAKE THEM:

CRUST

Preheat oven to 350 degrees

Prepare a 13″x9″ pan by placing parchment paper inside with the edges hanging over (so you can lift it out easily once it’s done).

In your mixer, beat the first three ingredients of the crust, then gradually add the flour until combined. Trust the process!! It will look like clumpy sand.

Press into the pan evenly and bake 16-20 minutes, or until golden brown.

APPLE TOPPING

Peel & chop up your apples into super small pieces.

Add all apple topping ingredients to a medium saucepan over medium heat.

Boil and stir until apples are soft.

Take off heat and let set 5 minutes covered.

Pour over cooled crust.

STREUSEL

Prepare the streusel, then sprinkle over the top of the apples.

Place back in oven for another 5-8 minutes, until bubbly.

Allow to cool completely, then place in fridge until chilled.

Serve with ice cream or whipped cream on top and enjoy!
