I LOVE lemonade. It’s sweet, tart, tangy, and super refreshing. The inspiration behind this little cupcake was simple – lemonade is awesome! Everything should be made in cupcake form, right? These are super simple to make and absolutely decadent. The cream cheese frosting boasts a hint of lemonade flavor, too, which knocks this one out of the park. Enjoy these, and be sure to share! 🙂
What you need:
- 1 box lemon cake mix
- 3 eggs
- 1 cup water
- 1/3 cup vegetable oil
- 3/4 cup lemonade concentrate (thawed)
- 3/4 cup powdered sugar
LEMONADE CREAM CHEESE FROSTING
- 8 oz cream cheese (softened)
- 1/2 cup butter (softened)
- 3 cups powdered sugar
- 3 tablespoons lemonade concentrate (thawed)
Make them:
Preheat oven to 350 degrees. Line muffin pan (this silicone muffin pan is my absolute favorite!) with cute cupcake liners. Check these cupcake liners out – perfect for this recipe! Spray with baking spray, and set aside.
In your mixer, combine the lemon cake mix, eggs, water and oil. Mix until just combined.
Fill muffin cups 3/4 of the way full with batter.
Bake for 13-18 minutes, or until a toothpick comes out clean.
While they are baking, make the lemonade drizzle. Combine the 3/4 cup thawed lemonade concentrate and the 3/4 cup powdered sugar with a whisk.
Place cupcakes on cooling rack, and poke about 5 holes in each with the end of a straw.
While they are still warm, cover them with a spoonful of lemonade/powdered sugar mixture , allowing it to get into the holes. After they’ve cooled to room temperature, do this a second time. More mixture = more tart lemonade flavor!
MAKE THE FROSTING
Combine the cream cheese and butter and beat for a full 2 minutes, until light and fluffy.
Add powdered sugar 1/2 cup at a time, while mixing on low speed.
Add about 3 tablespoons lemonade concentrate and continue to mix until you reach the perfect frosting consistency.
Frost your cupcakes, and cut colorful straws as a decoration!
