Grape Slushy Cupcakes

Summer is hot… and that’s an understatement in Texas! It’s HOT here, and not much squelches the heat more than a slushy!!  Last summer, I made Cherry Icee Cupcakes, and this year – it’s Grape Slushy Cupcakes! These fun cupcakes taste just like a super sweet grape slushy – and are so much fun to make!

WHAT YOU NEED:

  • 1 box white cake mix
  • 3 eggs whites
  • 1 cup water
  • 1/3 cup melted butter (or vegetable oil)

Grape Slushy Buttercream

  • 1 cup salted butter (softened)
  • 3-4 cups powdered sugar
  • 2-3 tablespoons heavy whipping cream (or milk)
  • 1 pouch Grape Kool-Aid – add more if it’s not tart enough for your taste
  • Purple sanding sugar

MAKE THEM:

Preheat oven to 350 degrees. Line baking tin with fun cupcake liners.

In a medium bowl, mix all cake ingredients until just mixed.

Optional – swirl a bit of purple food coloring gently into the mix to give swirls of purple in the cupcake

Fill each liner 2/3 full of batter.

Bake 18-23 minutes.

Allow to cool while you make the buttercream.

Grape Slushy Buttercream

Set mixing bowl and beater(s) in freezer for 5 minutes.

Beat butter for 5 minutes on medium high.

Add powdered sugar 1/2 cup at a time, beating in between.

Add heavy whipping cream and beat another 3 minutes.

Add Kool-Aid and beat until well combined.

Frost cupcakes and cover in purple sanding sugar.

Decorate with these adorable paper straws and you’re done!

These fun little cupcakes will remind you of a cool grape slushy, and end up being so cute!
