French Toast Cookies

Ron Swanson on Parks & Recreation had it right – “There has never been a sadness that can’t be cured by breakfast food.”  😉  Breakfast just makes me happy! A big pile of eggs, some cinnamon french toast with warm maple syrup, and a side of bacon…. I’m drooling now.  I’ve turned my love of breakfast foods into some yummy baked treats: Blueberry Pancake Cupcakes, Maple Bacon Truffles, and French Toast Cupcakes.  However, truffles and cupcakes aren’t as easy to snack on as cookies.

So, let’s make some french toast cookies! You’ll get that awesome cinnamon pop, and maple flavor in these simple cupcakes. The nutmeg really sets them apart by giving them that “toasted” flavoring that is so important in french toast. Enjoy these with your morning coffee, as a road trip snack, or a treat for yourself!

French Toast Cookies

What you need:

  • 3/4 cup butter (softened)
  • 1/2 cup sugar (+ 1/4 cup for cinnamon sugar mixture)
  • 1/2 cup brown sugar (packed)
  • 1 egg
  • 1/3 cup corn syrup
  • 2 teaspoons maple flavoring
  • 2 teaspoons vanilla
  • 2 1/4 cups flour
  • 1 3/4 teaspoons cinnamon + 1/2 teaspoon for cinnamon sugar mixture)
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

French Toast Cookies

Make them:

Preheat your oven to 375 degrees.

Lay parchment paper over your cookie sheets.

Mix together 1/2 teaspoon cinnamon and 1/4 cup sugar in a small bowl and set aside.

In your mixer, cream the butter, 1/2 cup sugar, and brown sugar until light and fluffy.

Beat in the egg, corn syrup, maple, and vanilla.

In another bowl, use a whisk to mix the flour, cinnamon, nutmeg, baking soda and salt.

Slowly add the dry mixture to the wet mixture.

Cover and refrigerate for at least 30 minutes, or until it’s firm enough to handle and shape into balls.

Use your medium cookie scoop to shape balls (about 1.5 tablespoons).  Roll balls in cinnamon sugar mixture, and place about 2 inches apart on your cookie sheet.

Bake for 11-14 minutes, or until the edges turn golden brown.

Cool on wire racks, and enjoy the taste of breakfast in a cookie! 🙂
