What’s better than Girl Scout Thin Mints?! Not much, if you ask us! We played around in the kitchen a few years ago with this recipe, and created a perfect copy cat creation. It’s definitely something you’ll wan to make, especially after all of your Girl Scout Cookies are gone!
Copy Cat Thin Mint Cookies Recipe:
½ cup (1 stick) butter @ room temperature
1 c. white sugar
1 egg
1 ½ tsp peppermint extract
1 c. of flour
½ c. Kiva Cocoa Powder
½ tsp salt
2 c. semisweet chocolate chips

Directions:
1. Beat butter and sugar together until light and fluffy.

2. Mix in egg and peppermint extract.
3. Whisk together flour, cocoa powder, and salt.

4. Mix dry ingredients into wet ingredients, in two additions.
5. Wrap dough in plastic wrap, and refrigerate for 30 min to an hour or until dough is firm.
6. Roll out dough on floured work surface (you’ll want a lot of flour, because it gets sticky), to about 1/8″ inch thick.

7. Use your favorite cookie cutters to create shapes.
8. Lay on parchment paper, on baking sheet.
9. Bake 10-12 minutes (or until top of cookies is matte), @ 350F

Chocolate Topping:
Melt chips and shortening on low power, in 20 second intervals, stirring each time, until fully melted.
On DRY, COOL cookies, spread the chocolate on top of each and let dry. You can also add 1/8 tsp more peppermint extract to the chocolate, if you prefer.
