Cookie Cake Bars

This recipe was inspired by cleaning my pantry. I had a random box of yellow cake mix, a couple of chocolate and butterscotch chip bags that were half used, and a little bit of peanut butter left in the jar that was preventing me from opening a fresh jar. Boom – a recipe is created! These Cookie Cake Bars are so moist and fun, with loads of texture & flavor. Plus, they are crazy easy to make. ENJOY!

WHAT YOU NEED:

Cake Layers

  • Yellow cake mix
  • 1/2 cup melted butter
  • 2 eggs

Filling

  • 1/2 cup peanut butter
  • 1/2 cup butter
  • 1/2 cup butterscotch chips
  • 1/2 cup milk chocolate chips

Optional topping – mini semisweet chocolate chips

MAKE THEM:

Preheat the oven to 350.

Mix the cake layer ingredients until just combined.

Lightly spray the bottom of a 13×9 inch baking dish.

Spread half of the dough mixture on the bottom and even out.

Save the rest for the top.

In a medium bowl, combine the filling ingredients. Microwave in 30 minute increments until smooth. Alternatively, you could do this over medium/low heat on the stove.

Pour filling over the bottom layer of the dough.

Top with the rest of the dough – crumbling pieces over it until it’s nearly all covered.

Sprinkle mini semisweet chocolate chips on top.

Bake 30-35 mins or until the top is golden brown.

Allow to cool completely before cutting into bars.
