Coconut Lime Cupcakes

Once upon a time, I created some Coconut Lime Puffs.  Since then, my boyfriend has asked me to make them at least once a month.  These are DREAMY!  But, if you know my blog, you KNOW how much I adore making cupcakes.  I turned those puffs into cupcakes, and they are absolutely perfect.  Creamy coconut, tart lime… yep… these go together like… like… coconut and lime! HA! 😉 Enjoy, friends 🙂

Cupcakes:

  • 1 box white cake mix
  • 1 cup water
  • 1/4 cup coconut milk 
  • 1/2 cup vegetable oil
  • 4 egg whites

Lime Filling:

  • 1/4 cup salted butter (softened)
  • 4 ounces cream cheese (softened)
  • 1 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 (0.3 ounce) package lime gelatin (or Jell-O)

Coconut Frosting:

  • 3/4 cup heavy whipping cream
  • 1/4 cup coconut milk
  • 1/2 cup powdered sugar

MAKE THEM:

Preheat the oven to 350 degrees.  Prepare the muffin pans – this silicone pan is AMAZING. Place cupcake liners in the cups.

Combine all of the cake ingredients in your mixing bowl and stir until just combined.

Fill muffin cups 2/3 cup full with batter.

Bake for 16-20 minutes, or until a toothpick comes out clean.

Let cool completely on a cooling rack while you make the filling. Check out these stacking tiered cooling racks!

MAKE THE FILLING

Combine butter, cream cheese, powdered sugar, vanilla and lime gelatin in your mixer until really well combined.

Set in fridge until you’re ready to fill the cupcakes.

Core each cupcake, and spoon in enough to fill the core.

MAKE THE COCONUT WHIPPED CREAM

As always, I recommend using a COLD bowl for this type of frosting.  I stick my mixing bowl in the freezer for about 10 minutes before making it.

Beat the whipping cream and coconut milk until soft peaks form.
Add  powdered sugar and beat another few minutes.
Frost your cooled cupcakes, then top with toasted coconut!

    I’d eat that! I love lime in anything. I’d just leave the coconut off the top (texture thing for me)
