Cinnamon Toast Cereal Cupcakes

Cinnamon Toast Crunch is one of those go-to sugary cereals I absolutely adore. It’s simple enough to be classic and memorable, and I love that. It really tastes like cinnamon and sugar on toast – an absolute nostalgic favorite from my childhood. I made these Cinnamon Crunch Cheesecake Bites, and they are a huge hit. But my heart will always belong to the cupcake… so you guys KNOW I had to create one!

WHAT YOU NEED:

Crust

  • 3 cups crushed Cinnamon Toast Crunch cereal (measure before crushing)
  • 8 Tablespoons butter (melted)

Cupcakes

  • 1 box yellow cake mix
  • 3 eggs
  • 1/3 cup vegetable oil (or melted butter)
  • 1 cup water

Filling

Cinnamon Buttercream

MAKE THEM:

Preheat oven to 350 degrees. Add liners to your cupcake tins.

Crust

Crush cereal until it’s powdery. Combine the butter and crushed cereal until mixed and even.

Place about 1 1/2 – 2 teaspoons of the cereal mixture in the bottoms of your cupcake liners and bake 6-8 minutes, until golden brown.

Allow to cool while you prepare the cupcakes.

Cupcakes

Make cupcakes according to directions on the box. Mix until just combined.

Fill cupcake liners 3/4 full of batter and bake 18-21 minutes or until golden brown and a toothpick comes out clean.

Once cooled complete, core the center of each cupcake and fill with Cinnamon Toast Crunch Spread.

Cinnamon Buttercream

Beat butter for 4 minutes, scrape sides of bowl and beat another 2-3 minutes or until the color is more white than yellow.

Add powdered sugar 1/2 cup at a time.

Add heavy whipping cream and beat 1 full minute.

Add cinnamon and vanilla and beat until combined.

Frost cupcakes and sprinkle top with Cinnadust and cereal pieces!  ENJOY!

These layered cupcakes are so much fun! Crunchy cereal base, soft & fluffy yellow cake filled with a delicious Cinnamon Toast Crunch Spread, and topped with a light cinnamon buttercream... YUM!

Ingredients

Crust

  • 3 cups crushed Cinnamon Toast Crunch cereal measure before crushing
  • 8 Tablespoons butter melted

Cupcakes

  • 2 - 3 cups powdered sugar
  • 1-2 tablespoons heavy whipping cream or milk
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • Cinnamon Toast Crunch Cinnadust Seasoning

Instructions
