Cinnamon Crunch Cheesecake Bites

I use this amazing Cinnamon Toast Crunch Cinnadust (Amazon or Sam’s Club) for a TON of things – on top of hot cocoa and coffee, mixed in with my oatmeal, drizzled over buttered toast…. and I created this recipe, just for this product!  Of course, you can use a regular combination of cinnamon and sugar.  I just really like the added vanilla and toasty flavors in the Cinnadust. This also features my favorite whipped cream recipe (I use that on my Maraschino Cherry Cheesecake Cupcakes) that you’ll absolutely love!

It’s a super simple recipe – but I do recommend that you have a mini muffin pan for it.  This Trudeau Silicone Mini Muffin Pan is my go-to because it’s under $20, SUPER reliable, cooks evenly, and can be thrown in the dishwasher!  Ready?  Let’s make ’em!

WHAT YOU NEED:

  • 3 cups Cinnamon Toast Crunch Cereal
  • 6 tablespoons unsalted butter (melted)

Cheesecake Whipped Cream:

Cinnadust or cinnamon/sugar mixture

MAKE THEM:

Preheat the oven to 350 degrees

Grease muffin cups

In a food processor or using a Ziplock bag and rolling pin, grind up the cereal until it’s crumbs.

Mix with butter until evenly coated.

Fill muffin cups about 1/2 way and press down and up sides of each cup.

Bake about 8 minutes, until they are golden brown.

Allow to cool slightly, then run a toothpick or knife around the edge of each, and pop them out.

Set aside and cool completely.

MAKE THE WHIPPED CREAM

Whip 2 cups heavy whipping cream until soft peaks just begin to form.  I usually add it about 2 minutes after beating.

Add powdered sugar and pudding mix, and beat until peaks are slightly stiffer.  NOTE – WATCH this carefully, because it sets up very quickly.

Pipe whipped cream onto each cup, then sprinkle with cinnamon sugar or Cinnadust!

These delicious little cookies with a whipped frosting are incredible - full of flavor and texture, they won't last long in your house!

  • 1 box Cheesecake Jell-O Pudding Mix 3.5 oz
  • Cinnadust or cinnamon/sugar mixture

    Did someone say cheesecake? The classic New York style is my favorite but there are just so many thins that you can do with cheesecake, all of them delicious!

    I always just buy store bought items when we have a pot luck bring something event for family get togethers. This year I’d like to try and make something. This seems like a good thing to try (especially since I personally love cheesecake). I like that it’s printable and looks great!
