Those gooey, melty, chocolatey lava cakes seem to be everywhere. Personally, I am not a fan of that much chocolate oozing out from the center of the cake. However, it inspired me to create a fun and EASY recipe for cupcakes that basically do the same thing – only with more chocolate! These are chocolate cupcakes with chocolate fudge inside, chocolate buttercream and chocolate sprinkles. Yep. That’s a LOT of chocolate. I love that the consistency of each of the elements is so different, because together, it makes for an amazing little treat.
What you need:
- 1 box of chocolate cake mix
- 1 box (3.9 oz) chocolate pudding/pie filling powder
- 4 eggs
- 3/4 cup oil
- 1/4 cup water
- 1/2 cup brewed coffee
- 1/2 cup sour cream
- chocolate fudge dessert topping (near the ice cream cones in the grocery store!)
Chocolate Frosting
- 1 cup butter (softened)
- 4 cups powdered sugar
- 3/4 cup cocoa (sifted)
- 1 1/2 teaspoons vanilla
- 3-4 tablespoons heavy whipping cream
Make them:
Preheat the oven to 350 degrees. Prep your muffin pans. I prefer the smaller mini cupcakes and the silicone muffin pans (way easier cleanup and even cooking!). Spray them with olive oil very lightly, or use cupcake liners.
Add the chocolate cake, pudding mix, eggs, oil, water, coffee and sour cream to your mixer. Mix until well combined, but do not over mix!
Fill muffin cups 1/2 way full with batter.
Bake 10-13 minutes, or until a toothpick comes out clean.

- 3-4 tablespoons heavy whipping cream
Instructions

- Bake 10-13 minutes, or until a toothpick comes out clean.
- Let cool for 3 minutes on cooling rack. You want to poke them while they are still slightly warm.
- Using your finger or the end of a wooden spoon, create a hole in the center of the cupcake. Fill with chocolate fudge sauce.
Make the frosting:
- In a cold mixing bowl (I pop mine in the freezer for about 10 minutes), cream the butter for 4 minutes.
- Add the vanilla and beat well.
- In a small bowl, whisk together the sifted cocoa powder and powdered sugar until combined.Add the dry mixture to the butter mixture slowly, on medium speed until well combined and creamy.
- Add the heavy whipping cream, and beat another 3 minutes.
- Frost your cupcakes and sprinkle (with chocolate sprinkles, of course)!
