Here’s a SUPER easy dinner solution to those that need something tasty, quick and simple. These Chicken Enchilada Soft Tacos were created when I found half of the ingredients I wanted for enchiladas, and half that I needed for soft tacos. I combined the two to make one killer meal that definitely left us wanting more!
3-4 large boneless, skinless chicken breasts
1 large can enchilada sauce
1 small can green chilis
1 teaspoon cumin
1 teaspoon black pepper
soft tortilla shells
Spanish Rice (I use Rice-a-Roni)
Refried Beans
lettuce, tomato, black olives, jalapeño, cheese, sour cream, hot sauce, salsa, guacamole – whatever you stuff your tacos with!
Cut up raw chicken breasts into bite-sized pieces. Place in a bowl with enchilada sauce, chilis, cumin and pepper. Mix lightly, coating chicken. Let sit and marinade at least 30 minutes. In a large skillet, pour the entire contents of the bowl, and cook on medium until chicken is cooked through. Stuff your tortillas, and enjoy! Wasn’t that easy!?
