Cherry Pistachio Crinkle Cookies

Fa la la la la lalalala!!! 🙂 Instead of writing an entire paragraph about why I created this cookie and how good it is, how about we just get right to it, so you can enjoy them quicker!

WHAT YOU NEED:

  • 1 cup butter  (softened)
  • 1/2 cup powdered sugar
  • 1  teaspoon almond extract
  • 3.4 oz pkg instant pistachio pudding mix
  • 1 2/3 cups all-purpose flour
  • 1/2 cup cherries – You can also place the chopped cherries in the freezer for 15-20 minutes to make sure they don’t stain the dough.
  • 1/4 cup white chocolate chips

MAKE THEM:

In your mixing bowl, beat the butter until light & fluffy.
Add powdered sugar, almond extract, and pudding mix. Beat until combined.
Drop in food coloring for a darker color, if desired.
Add flour & mix.
Gently fold in cherries & white chocolate chips.
Wrap dough in plastic wrap and freeze for 15-30 minutes, until slightly firm.

Preheat oven to 350 degrees & line a cookie sheet.

Scoop about 1/2 tablespoon of dough and roll into ball with your hands. Gently flatten.

Bake 9-12 minutes, then open oven and gently press with the bottom of a glass cup to flatten.

Back another 3-5 minutes or until they are set.

Allow to cool completely, then add sprinkle of powdered sugar, if desired.
