Caramel Apple Fudge

Ahhhh, fall flavors.  Caramel apples are seriously such a thing of the past.  Now it’s just caramel apple bites and caramel apple cupcakes … anything to avoid the real thing, which is messy and difficult to eat.  I decided to try my hand at a caramel apple fudge.  I just used my regular fudge recipe, added the flavors, and BOOM!  It’s DELICIOUS!

WHAT YOU NEED:

  •  1/2 stick unsalted butter
  •  3 cups mini marshmallows
  •  1/2 cup sugar
  •  1/2 cup heavy whipping cream
  •  3 packets apple cider drink mix (I use Alpine brand -0.74 oz each)
  •  3 cups white chocolate chips (1 1/2  of the 12 oz bags)

Caramel Topping

  •  1 cup caramel squares (or bits)
  • 3 tablespoons heavy whipping cream

MAKE THEM:

Line your 8×8 baking pan with tin foil – enough to overhang.

In a medium-large pot, heat the butter, marshmallows, sugar, heavy cream, and apple cider packets over medium for about 10 minutes.  Be sure to stir at least every 2 minutes.

Remove from heat and carefully stir in the white chocolate chips until totally melted.

Pour into pan, and tap to help it settle.

Microwave the caramel and heavy cream, 30 seconds at a time, until smooth.

Pour caramel over fudge and swirl a little bit with a toothpick or knife.

Set in fridge for 4 hours+, then cut and serve!

This is best stored in the fridge!

Tart apple cider with a sweet, creamy caramel.... it's fudge at its best!

  2. What a great idea. I always have apple cider mix in the house…great stuff and never thought to use it this way. I will now though. I can imagine that this would be excellent. Saving this recipe, thanks.
