Hello, butterscotch! Mmmmm… that flavor gets me every time. I absolutely love these Butterscotch Coconut Squares because they are so easy to make and taste so dang good! Plus, you’ll use only 5 ingredients. The combination of coconut and butterscotch is fresh, surprising and really tasty. I hope you love this recipe as much as I do, and make it this holiday season! I decorate mine with red and green sprinkles to make it a little more festive, but you can use whatever you want!
What you need:
- 1/2 cup butter, plus enough to grease a 9-inch square pan
- 1 package butterscotch chips (11 oz.)
- 1 cup peanut butter (don’t try to get fancy and use chunky – go with creamy for this)
- 1 cup mini marshmallows
- 1/2 cup flaked coconut
Make them:
Grease a 9-inch square pan with butter.
In a heavy saucepan or microwave, melt butter, butterscotch chips and peanut butter until it’s smooth. Cool for about 20 minutes. You don’t want the marshmallows to melt when you add them, so letting it cool is important. Stir in the marshmallows until they are just combined. Pour the mixture into your square pan, and sprinkle the top with coconut. This is also when you’ll add sprinkles or fun, edible decoration. Leave in the fridge, uncovered, for at least 2 hours or until firm. Cut into pieces and store in an airtight container.
