I’m not a fan of bananas… at all. I’m sure I’m a bit weird in this affliction, but I just do NOT like bananas. HOWEVER – I LOVE to bake with them! They are an amazing resource in the kitchen, especially when creating baked treats. I decided to try banana bread muffins because I feel like banana bread is just overdone and boring. I did make a Peanut Butter Bacon Banana Bread… and that’s pure Heaven. These are a little basic but actually SOOOOO delicious and easy! Great for quick morning breakfasts!
WHAT YOU NEED:
- 2 1/2 cups Flour
- 1 t salt
- 1 t baking soda
- 1 1/2 t baking powder
- 2/3 cup melted butter
- 1 t vanilla extract
- 2/3 cup brown sugar (packed)
- 2 eggs (room temperature)
- 2/3 cup buttermilk
- 3 medium-large bananas (mashed)
- 1 1/2 cup semisweet chocolate chips
MAKE THEM:
Preheat oven to 350 degrees.
Place cupcake liners in cupcake pan and lightly spray.
In a medium bowl, whisk the flour, salt, baking soda, and baking powder. Set aside
In your mixer on medium-low, beat butter, vanilla, sugars, and eggs until mixed well.
Add wet ingredients to the dry mixture and stir just a few times to get them incorporated. DO NOT OVER MIX!
Add bananas and buttermilk alternatively with a very gentle stir until everything is in the bowl.
Add chocolate chips and gentle blend.
Fill each cupcake liner 2/3 full and bake for 18-23 minutes.
These are amazing just out of the oven (or reheated) with a little pat of butter and a hot cup of coffee!
