September is such a weird month… it’s the end of summer and the beginning of fall, all in one month. Of course, here in North Texas, it will feel like summer for the next couple of months! That doesn’t stop me from creating autumn recipes and enjoying those flavors, even when temps are in the 100s! This apple pie cupcakes is super easy to make, and full of delicious, fall goodness! Enjoy!
What you need:
- 1 box yellow cake mix
- 1 cup water
- 3 eggs
- 1/3 cup oil
- 1 1/2 teaspoons apple pie spice (or combine 1/2 teaspoon cinnamon, ginger, and allspice OR nutmeg)
- 1 can (20 oz) apple pie filling
Cinnamon Vanilla Buttercream
- 1 cup unsalted butter (softened)
- 2 1/2 teaspoons vanilla
- 1 1/2 teaspoons cinnamon
- 4 cups powdered sugar
- 1 -2 tablespoons heavy whipping cream (add until you have the frosting consistency you want)
- 3-5 graham crackers (crushed)
Make them:
Preheat oven to 350 degrees.
Prepare cupcake pan (my silicone pans are the BEST!) with fun cupcake liners, then spray lightly.
In a large bowl, combine the cake mix, water, eggs, oil and apple pie spice until just combined. Don’t over mix, or you’ll add air to the batter!
Bake for 17-21 minutes, then allow to cool.
Place apple pie filling in a bowl, and using a knife or fork, carefully break down the slices of apple into chunks.
Cut center out, and spoon in apple pie filling. I used almost the entire can of pie filling for 20 cupcakes.
Make the frosting
Chill your bowl and beater(s) in the freezer for 2 minutes.
Beat the butter until creamy.
Add vanilla & cinnamon and beat another 20 seconds until combined.
Add powdered sugar 1 cup at a time until blended.
Add 1-2 Tablespoons heavy whipping cream, and beat for another 2 minutes.
Frost cupcakes, then sprinkle with graham crumbs. ENJOY!!

Those are fun cupcakes. We had summer this weekend with record high of 101 degrees. Tonight we’re getting WINTER and SNOW.
