Apple Pie Cookie Cups

Apples are my favorite fruit. I absolutely love to bake with them, too! Here’s a fun and EASY take on classic apple pie. It’s far simpler and more portable than taking an apple pie to your family’s Sunday dinner!

WHAT YOU NEED:

  • 1 package refrigerated sugar cookie dough
  • 1 large green apple
  • 2/3 cup brown sugar
  • 1 tablesoon lemon juice
  • 1 teaspoon apple pie spice
  • 2 teaspoons cornstarch

MAKE THEM:

COOKIES

If cookies are in powder form, make dough according per package instruction. If refrigerated, cut into about 2 tablespoon sections. Place dough in lightly oiled mini silicone muffin pan and bake at temperature on package.

Once cookies are just about done, use the end of a wooden kitchen tool to gently deflate and push in the centers to create a cup. Let bake rest of the way and push in again once they are out of the oven.

APPLE PIE FILLING

In a medium saucepan over medium low heat, combine the apple, sugar, lemon juice, spice, and cornstarch. Mix well and allow to boil for about a minute, stirring while it boils. Take off heat and let set for 15 minutes. You can also put it in the fridge to set quicker.

Fill the cookie cups and dust with powdered sugar. ENJOY!
