White Chocolate Pumpkin Spice Cupcakes

I’m basic.  I do love pumpkin spice, and look forward to it every fall.  However, I prefer a more toned-down version… if that even exists. It seems like every product with pumpkin spice in it is overpowering – can I get an amen!?  I thought that white chocolate would compliment AND help to temper the super pumpkin spice flavor. And it WORKED!  This recipe is super simple and has gotten shocking reviews from family and friends – they LOVE these!

What you need:

  • 1 box white cake mix
  • 1 cup water
  • 3 egg whites
  • 1/3 cup oil

Whipped Cream

Pumpkin Spice (make it from ingredients below or use generous 1.5 teaspoons pre-made)

  • 1/3 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves

Make them:

Pre-heat oven to 350.   Prep your muffin pan – for minis, spray each section. For regular-sized, use cupcake liners. These cupcake liners are super cute and give off that fall vibe!

Place your metal mixing bowl and mixer in the freezer.  This will help the whipped cream fluff and set better when you start making it.

In a medium bowl, use a whisk to lightly mix the cake mix, oil, water, and eggs until just combined.

Fill muffin cups 3/4 full.

Bake 18-21 minutes for regular-sized, and 12-16 minutes for minis.  Let cool completely.

Make the whipped cream

In your mixer, whip the heavy whipping cream until it just begins to thicken.

Add the powdered sugar, pudding mix powder, and pumpkin spice (be sure to mix prior to adding) into the whipped cream and beat until set – when it doesn’t move from the beater after being pulled up.

Frost cupcakes, and sprinkle with cinnamon sugar if desired.

  2. This recipe looks fantastic! I’m like you–I like pumpkin spice, but just a smidge. Most things have too much. This sounds just right.
