Peach Cheesecake Cupcakes

It could be my lifelong obsession with The Golden Girls that triggers my love for cheesecake. It could be the tangy, creamy, sweet combination.  Either way, I LOVE cheesecake!  I wanted to create something that suited a summer theme, while still incorporated cheesecake into a cupcake. And… BOOM!  This fun, easy recipe was born. It’s super yummy and definitely doesn’t need a frosting to compliment it! Hope you enjoy 🙂

What you need:

Cake:

  • 1 box yellow cake mix
  • 3 eggs
  • 1 cup water
  • Peach Puree: 1 1/2 diced & peeled peaches, 1 tablespoon lemon juice, 1 tablespoon water and 1 tablespoon sugar.   This will make just over 1/3 cup, and replaces the oil you would normally use.

Cheesecake filling:

  • 2 tablespoons heavy whipping cream (alternatively, you can use 2 tablespoons of Cool Whip, and omit the sugar below)
  • 2 tablespoons sugar
  • 4 oz cream cheese (softened)
  • 1/4 teaspoon vanilla
  • 1/2 cup peaches (peeled & diced)

Make them:

CUPCAKES:

  • Preheat the oven to 350 degrees and prep your baking pan with cupcake liners.
  • In a mixing bowl, add cake mix, eggs and water
  • make peach puree: Bring ingredients to boil in saucepan over medium heat. Simmer 4-6 minutes. Remove and let cool to room temperature.  
  • Mix until smooth before adding to cake batter.
  • Combine until just mixed.
  • Fill cupcake liners 3/4 full and bake 18-21 minutes.
  • Allow to cool while you make the filling.

FILLING:

  • Beat heavy whipping cream until stiff peaks form.  If you use Cool Whip, you’ll omit the sugar from this filling recipe
  • In another bowl, beat sugar and cream cheese until smooth
  • Beat in vanilla
  • Stir in peaches
  • Spoon into cupcakes hollowed out cupcake centers.  Since you aren’t using a frosting, you can be generous!

These sweet little cupcakes don't need frosting! The creamy, peach cheesecake filling is the perfect compliment to the peach-infused cupcake!

  2. Cheesecake is my FAVORITE dessert!! I have never had peach cheesecake before but it sounds so good. I’m going to make these for our 4th of July gathering. Thanks for the recipe!

    This will be perfect since I have fresh peaches! My family will love the cupcakes!

  4. So great to use a cake mix as a base, don’t have to keep lots of ingredients on hand and makes baking prep faster. Love peaches too, what a great idea to use them.
