Peanut Butter & Jelly Cupcakes

Very few things are more nostalgic and comforting than a peanut butter & jelly sandwich.  It’s sweet, slightly salty, squishy, and simple. I wanted to recreate the flavors and textures of the almighty pb&j, in cupcake form.  And I have to admit.  These came out beautifully!  

The recipe is super simple, really quick, and ridiculously delicious. If you’re a peanut butter fan – I guarantee you’ll be sneaking licks of the frosting, because this peanut butter buttercream is AMAZING!

This recipe will give you about 15 cupcakes, with enough frosting for a double batch.  I don’t recommend halving the frosting, though.  Just enjoy the leftovers if you don’t make more cupcakes… or double the cupcake recipe for more! 😉  You can dip Nilla Wafers, green apple slices, or chocolate chip cookies in the frosting, and it’s amazing!

  • 1 box white cake mix
  • 3 egg whites
  • 1/3 cup oil
  • 1 cup water
  • 1 cup strawberry (or your choice of flavor) jelly
  • 1/4 cup chopped peanuts

PEANUT BUTTER BUTTERCREAM

  • 1 cup unsalted butter (softened)
  • 1 cup peanut butter (creamy only!)
  • 3 to 3.5 cups powdered sugar (sifted)
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2-3 tablespoons heavy whipping cream (or milk)

Preheat the oven to 350 degrees.  Prep your muffin pans.  Use cupcake liners and lightly spray the insides (pass over the entire pan once) with baking spray.

In a small bowl, mix together the cake mix, egg whites, oil, and water until just combined.

Fill muffin cups 1/2 full with batter.

Bake 14-21 minutes, OR until a toothpick comes out clean.

Once completely cooled, hollow out the centers using a knife.

Fill with spoonful of jelly.

Make the frosting:

Beat peanut butter for about 4 minutes, until extremely creamy.

Add powdered sugar, about 1/2 cup at a time.

Add vanilla & salt.

Stop mixer and  add heavy whipping cream (or milk).  Slowly increase the speed and leave it beating on medium-high for about 4 minutes.

Frost the cupcakes – I liked using a knife to make it more of a messy/realistic peanut butter frosting.

Sprinkle with peanuts and jelly (warm in microwave a few seconds at a time until it’s the right consistency to drizzle).

These cupcakes taste exactly like a classic pb&j on white bread! This sweet, cupcake version will bring you back to your childhood, and make you remember why you loved this simple sandwich so much!
