Triple Chocolate Crunch Cookie Bars

Layers are so much fun!  You can do so many things with desserts and layers. Texture can make a sweet treat even sweeter when you add different elements to it. I wanted to make a really delicious but fun bar – something with tons of chocolate and lots of layers… which is how this was created!

I call them “Triple Chocolate Crunch Cookie Bars” because that perfectly describes them. The bottom layer is a triple chocolate cookie, middle layer is marshmallow, and the top is a great chocolatey crunch!  This recipe is easy and quick – so with minimal effort, you can make it, too!  They look like a hot mess, but they are absolutely delicious 🙂

What you need:

COOKIE LAYER

  • 1 bag Betty Crocker Double Chocolate Chunk Cookie Mix  (alternatively you could use chocolate chip)
  • 1/2 cup butter (softened)
  • 1 tablespoon water
  • 1 egg

CENTER LAYER

  • 3 cups mini marshmallows

CRUNCH LAYER

  • 2 cups Rice Krispies Cereal 
  • 1 package (11.5 oz) milk chocolate chips
  • 2/3 cup corn syrup 
  • 1/4 cup butter (cubed)
  • 2 teaspoons vanilla
  • OPTIONAL: 1 cup miniature semisweet chips 

MAKE THEM:

Preheat oven to 375 degrees. 

Grease an 11×8 or 13×9 pan.

In a bowl, combine the cookie layer ingredients.  Pour into pan.

Bake 12-15 minutes or until cooked through.

In a medium saucepan, place the milk chocolate chips, corn syrup, and butter.  

Heat over medium-low until smooth.

Remove from heat and stir in cereal, vanilla, and mini semisweet chips.

Place marshmallows evenly over the cookie layer.  Bake another 2 or so minutes, until they begin to puff up in the oven.

Carefully spread the top layer (cereal layer) over the marshmallow layer.  You can grab handfuls at a time, and smash them into squares, then place in the pan on top of the marshmallows for easier handling and spreading.

Cool totally on a rack, then refrigerate until it’s firm (a few hours).

Cut into bars, and ENJOY this unique layered treat!
