Funnel Cake Cupcakes Recipe!

These cupcakes will have you feeling like you’re at your favorite county fair!  We think of them as a funnel cake/churro mixture, in one cupcake that’s absolutely divine.  These are super moist, thanks to the addition of sour cream, and the fried tops of them add a sweet crunch that will leave you wanting more!  Enjoy this fun recipe!



Cupcakes

1 1/2 cups all-purpose flour
1 1/2 teaspoons cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter (room temp)
1 cup sugar
2 eggs (room temp)
1 teaspoon vanilla extract
1/2 cup sour cream


Frosting
8 ounces cream cheese (room temp)
1/4 cup butter (room temp
4 -6 cups powdered sugar
1 teaspoon vanilla
1 teaspoon cinnamon
Beat cream cheese and butter until fluffy.  Add in 2 cups powdered sugar and mix.  Add in vanilla and mix.  Add in cinnamon and mix.  Continue to add powdered sugar until mixture has frosting texture.

Preheat oven to 350 degrees. In a medium bowl, combine flour, cinnamon, baking powder, and salt.  In another bowl, cream butter and sugar until light and fluffy.  Add eggs one at a time, until just combined.  Stir in vanilla. Add in flour mixture 1 cup at a time, mixing gently until just combined.  After half of the flour mixture has been added, mix in 1/2 cup sour cream and continue to add flour until all has been added.  Be sure to not over mix the dough!  Fill each muffin cup to nearly the top of each liner.  Bake about 15 minutes or until toothpick comes out clean.  Allow to cool completely.  Heat oil on a frying pan to about 350 degrees.  Carefully hold cupcake upside down and dip the top into the oil.  Let fry for about 30 seconds, and check to be sure it isn’t burning.  Turn down heat if burning occurs.  Fry tops of each cupcake.  Dip tops in cinnamon and sugar mixture until nicely coated.  Let try and cool.  Cut out centers of cupcakes and pipe in frosting.  ENJOY!

  1. My husband would marry me all over again if I made him these!!! LOL Now do I make them and risk him asking me weekly to bake them for him… hmmmmm 🙂 Heck yea I am.. I want to eat them too!
