Recipe: Chicken & Broccoli Casserole!

I can honestly say that this is my absolute, 100%, truly and honestly FAVORITE casserole.  And I LOVE casserole, so that’s saying a lot!  This recipe never fails to please.  In fact, everyone that tries it, takes the recipe home with them.  Kids that hate broccoli will eat it in this casserole!  It’s a super versatile meal that allows you to change the meat, cheese, soup AND flavor of stuffing.
  • Broccoli (crowns only) – enough to cover the bottom of a 13×9 inch baking pan
  • 4-5 cups chicken, cooked and cubed
  • 1 can cream of broccoli soup
  • 1 tablespoon lemon juice
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 1 package of Stove Top Stuffing (whichever flavor), or stuffing mix of your choice

Cook broccoli, drain and place in bottom of casserole dish. Place cooked, cubed chicken on top of broccoli. Combine soup, lemon juice, sour cream and mayo. You may prefer it with a bit more lemon juice – but it’s up to you!  Pour over the top of the chicken. Cover with cheese, then Stove Top.  DO NOT make the stuffing – put it on the casserole DRY, right out of the box.

Bake at 350 for 45 minutes, COVERED. Uncover and bake until bread crumbs are as crunchy as you want.  This can take up to another 30 minutes.

This recipe is VERY rich and VERY creamy, so you don’t need an side dish with it.  Get ready to have a new favorite casserole!  If you make this, come back and let us know what you thought!  If you have any alterations you make to the recipe, we’d love to hear those, too!

  1. This does sound really good, and brings back memories of a casserole my sister used to make, and she doesn’t remember ever making it, so I could get the recipe!!! I must try this!
