Here’s a great dinner idea for chilly Winter evenings! This beef and bacon slow cooker chili is super customizable and versatile – add or replace almost any of the ingredients in it with your own substitutes! It’s meaty, flavorful, and pairs perfectly when served on top of a piping hot baked potato, with a dollop of sour cream!
1 1/2 pounds ground beef
1 can dark, red kidney beans
1 can black beans
1 can chili beans
2 tomato sauce
1 dry chili seasoning packet
1/8 cup diced onion
garlic (to taste)
hot sauce (optional)
1 cup water
Cook meat and set aside. In your crock pot (on HIGH), add all beans, tomato sauce, chili seasoning packet, garlic, onion and any optional additions. Add beef to bean mixture. Let cook on HIGH at least 5 hours, stirring occasionally.
Fry up bacon, and just before serving, crumble bacon into chili. Stir.
Serve on baked potato with sour cream and extra bacon pieces sprinkled on top.

This looks so good. I love my CrockPot and love chili but haven’t tried one yet. I love the idea of adding bacon to it. All the better.
